Central Kitchen Solutions
A central kitchen may prepare components for several menus or delivery points in the same shift. Carrots for a cooked meal, shredded vegetables for fillings and minced meat for patties cannot all be judged by a single machine's maximum output. Each component needs a defined cut or texture, a receiving point and a handoff to the next operation. This guide covers central kitchen food preparation equipment for cutting, shredding, grinding and forming; cooking, chilling, packaging and distribution must be specified and validated separately for the facility.
Make a component map before choosing machines
Start with the dishes supplied by the central kitchen, then list the components shared between them. For each component, record the incoming ingredient and condition, required output, quantity per batch, destination and the time it must leave preparation. The examples below illustrate the questions to settle; they are not a fixed line or a customer installation.
| Component | Specification to confirm | Next operation |
|---|---|---|
| Diced carrots | Incoming size, cube dimensions and acceptable broken pieces | Cooking or portioning |
| Potato or radish strips | Strip width, length and selected cutting disc | Recipe preparation |
| Ground meat for patties | Meat condition, grinding texture and formed portion | Mixing, forming and further handling |
The value of this map is that a team can assess each output against its own recipe. “Vegetable cutting” and “meat processing” are too broad to define a workable configuration.
Route firm vegetables by the finished shape
For cubes or strips from suitable firm vegetables and fruit, the JX-500 fruit and vegetable dicing machine is one model to evaluate. Its product page lists cubes and straight or serrated strips, with cutting configurations in the 5–25 mm range. Confirm the actual ingredient, required cut and installed assembly before including it in a proposal.

When the output is julienne strips or slices from firm root vegetables, compare the JX-66 vegetable shredding machine and its interchangeable cutting discs instead. The JX-66 equipment demonstration below lets you see the machine in operation. The finished size and suitability for your ingredients should still be checked in a trial; this video is not a measured capacity test.
Keep the meat stream and formed products distinct
If a menu needs minced meat, a Jiaxuan commercial meat grinder can be selected around prepared boneless meat, the desired grind and the batch volume. Plate choice, raw-material condition and cleaning between recipes affect the result. If the next product is a burger or similar portioned item, the ground mixture may then be prepared for the JX-100 patty forming machine. The recipe's particle size, moisture and binding characteristics should be checked for clean forming. Mixing and any downstream cooking or freezing need their own process design; these two machines do not by themselves constitute a complete patty line.
Plan the handoff between batches and destinations
For a shared preparation room, specify where each incoming ingredient is handled, which containers receive the output and how each batch is identified for the next team or destination. Include room for safe feeding, removal of cutting parts and cleaning. A change from diced carrots to potato strips is more than a setting on a machine: the team may need a different cutting assembly, collection container and documented changeover. Raw meat and vegetables should follow the site's separation and sanitation procedures.
Before ordering, trial representative ingredients and the requested finished forms. Record acceptable output, visible damage, loading effort, changeover time and cleaning access under stated conditions. This is more useful for layout decisions than comparing catalogue capacity figures without the raw material and cut specification.
Send a component brief for a central kitchen proposal
Share your menus, the ingredients and output specifications for the busiest production day, raw-material photographs, batch quantities, power supply and a simple room plan. State which steps are already installed and which components must leave the kitchen for another site. We can then discuss the appropriate central kitchen vegetable processing and meat preparation equipment, plus the sample tests needed to verify each selection. Contact Jiaxuan Machinery with your component brief.
